Dogs have an excellent sense of smell.
We experience the world through our eyes, they experience it through their noses, an adage a dog trainer once told me.
Dogs may be able to smell every single ingredient in their food, possibly toxins and other unappetizing additions.
Since dogs can actually smell cancer and other diseases on human companions long before the human companion finds out for themselves, this isn't too far of a stretch.
It stands to reason that some would be picky with their food because of this.
If you sometimes feed your dog 'human' food like I do (mostly bits of turkey and chicken), then maybe you should, at a slight distance (it's your preference), have your pet sniff the food for you to see if its up to par to be consumed.
(kidding, though it would be cool for people to experiment with this too. There were times I tried giving my dog pieces of meat off my plate and he didn't want it, then I ate the food and it actually was disgusting).
So, if a dog isn't eating the food you give him, he probably smells something suspicious, or just isn't hungry.
